2 packs Chicken of the Woods mycelium mushroom protein

300 g pasta (penne or fusilli)

1½ cups unsweetened plant-based cream

2 tbsp nutritional yeast

1 tbsp olive oil

½ cup vegan grated cheese (optional)

Salt & pepper

Preheat oven to 180°C (350°F).

Cook pasta according to package instructions; drain.

Heat olive oil in a pan and lightly sauté the mushroom protein.

Add plant-based cream and nutritional yeast, stirring until smooth.

Combine pasta with sauce and mushroom protein.

Transfer to a baking dish and top with vegan cheese if using.
