Mushroom Protein High-Protein Pasta Bake

Ingredients

  • 2 packs Chicken of the Woods mycelium mushroom protein

  • 300 g pasta (penne or fusilli)

  • 1½ cups unsweetened plant-based cream

  • 2 tbsp nutritional yeast

  • 1 tbsp olive oil

  • ½ cup vegan grated cheese (optional)

  • Salt & pepper

  1. Preheat oven to 180°C (350°F).

  2. Cook pasta according to package instructions; drain.

  3. Heat olive oil in a pan and lightly sauté the mushroom protein.

  4. Add plant-based cream and nutritional yeast, stirring until smooth.

  5. Combine pasta with sauce and mushroom protein.

  6. Transfer to a baking dish and top with vegan cheese if using.

  7. Bake for 20 minutes until lightly golden on top.

  8. Serve warm.
