Mushroom Protein High-Protein Chili

Ingredients

2 packs Chicken of the Woods mycelium mushroom protein

1 can (400 g) crushed tomatoes

1 can (240 g) cooked red kidney beans, drained

1 small onion, diced

2 cloves garlic, minced

1 tbsp olive oil

1 tsp chili powder
-
1 tsp ground cumin
-
½ tsp smoked paprika

Salt & pepper

Heat olive oil in a large pot over medium heat.

Add onion and garlic and sauté until soft and fragrant.

Stir in chili powder, cumin, and smoked paprika.

Add crushed tomatoes and kidney beans, mix well.

Gently fold in the mycelium mushroom protein.

Simmer uncovered for 20 minutes, stirring occasionally.
